Kale

Kale is a leafy green in the brassica family. There are several varieties, but I focus on green curly and lacinato.

Will it last?

Kale will last for a week or more in a plastic bag in the fridge.

No time to cook. How do I use this?

1. Bowl of food. Chop, cook in a pan with oil and salt and pepper until just barely tender.

​2. Kale salad! Best with lacinato. Strip the leaves from stems. Roll leaves and thinly slice. Massage with olive oil, lemon juice, salt, and peppers.

3. Chop finely and scramble in an egg.
